  • 2 cups plant-based milk almond, coconut, or soy
  • 1-2 tablespoons maple syrup optional
  • 1 teaspoon vanilla extract

  • Prepare the Strawberries:
  • In a blender, puree the fresh strawberries until smooth.
  • Mix the Ingredients:
  • In a mixing bowl, combine the strawberry puree, chia seeds, plant-based milk, maple syrup (if using), and vanilla extract. Whisk until well combined.
  • Chill the Mixture:
  • Cover the bowl and refrigerate the mixture for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
  • Serve the Pudding:
  • Once the pudding has set, give it a good stir. Divide the pudding among 4 small jars or glasses.
