  • 1 1/2 cups grated zucchini about 1 medium zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar

  • 1 teaspoon vanilla extract

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • Grate the zucchini and squeeze out excess moisture using a clean towel. Measure out 1 1/2 cups.
  • In a medium bowl, whisk together 1 1/2 cups flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  • In a large bowl, mix 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 cup oil, 1/4 cup applesauce, 1 tablespoon flaxseed meal mixed with 3 tablespoons water, and 1 teaspoon vanilla extract.
  • Add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the grated zucchini and, if desired, 1/2 cup chopped walnuts or pecans.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
