Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 sweet potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 red bell pepper, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup natural peanut butter
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions:

  1. In the slow cooker, combine the diced onion, minced garlic, grated ginger, diced sweet potatoes, sliced carrots, diced red bell pepper, drained and rinsed chickpeas, vegetable broth, diced tomatoes, peanut butter, tomato paste, ground cumin, ground coriander, smoked paprika, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the vegetables are tender.
  4. Taste and adjust seasoning with salt and pepper if necessary.
  5. Serve hot, garnished with fresh cilantro, over cooked rice.
