Ingredients:

  • 3 cups rolled oats
  • 1 cup nuts and seeds (almonds, walnuts, pumpkin seeds, sunflower seeds)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Equipment/Utensils Required:

  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Spatula

Instructions:

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix Ingredients: In a large mixing bowl, combine the rolled oats, nuts, seeds, shredded coconut, maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt. Mix until well combined.
  3. Spread on Baking Sheet: Spread the granola mixture evenly onto the prepared baking sheet.
  4. Bake: Bake the granola in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown and crisp.
  5. Cool: Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.
  6. Serve or Store: Once cooled, you can enjoy the granola immediately or transfer it to an airtight container for storage.
