Vegan Pasta with Creamy Kale and Walnut Sauce

Ingredients:

  • 12 oz (340g) pasta of your choice
  • 4 cups kale, chopped
  • 1 cup walnuts, toasted
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/2 cup vegetable broth
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Equipment/Utensils Required:

  • Large pot
  • Skillet
  • Blender or food processor

Instructions:

  1. Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Toast the Walnuts: In a dry skillet, toast the walnuts over medium heat for 2-3 minutes until fragrant. Remove from heat and set aside.
  3. Saute the Kale: In the same skillet, heat olive oil over medium heat. Add minced garlic and chopped kale. Saute for 5-7 minutes until the kale is wilted.
  4. Prepare the Sauce: In a blender or food processor, combine the sauteed kale, toasted walnuts, nutritional yeast, vegetable broth, salt, and pepper. Blend until smooth and creamy.
  5. Combine Pasta and Sauce: Pour the creamy kale and walnut sauce over the cooked pasta. Toss until well coated.
  6. Serve: Divide the pasta into serving bowls. Squeeze fresh lemon juice over the pasta and garnish with lemon wedges. Serve hot and enjoy!
