  • 12 oz (340g) pasta of your choice
  • 3 cups butternut squash, peeled and cubed
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup coconut milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon dried sage
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Butternut Squash Sauce: In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the cubed butternut squash, vegetable broth, dried sage, salt, and pepper. Cover and cook until the squash is fork-tender, about 20 minutes.
