After a long day of exploring, we stumbled upon a charming little trattoria that served the most heavenly avocado pasta. Ingredients:

  • 8 oz (225g) spaghetti or pasta of your choice
  • 2 ripe avocados, peeled and pitted
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Cherry tomatoes, halved, for garnish (optional)
  • Fresh basil leaves, chopped, for garnish (optional)

Equipment/Utensils Required:

  • Large pot
  • Blender or food processor

Instructions:

  1. Cook the Pasta: Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocados, minced garlic, fresh basil leaves, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste.
  3. Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the creamy avocado sauce until well coated.
