Ingredients:

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped dates

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the rolled oats, all-purpose flour, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Gently fold in the chopped dates until evenly distributed throughout the dough.
  6. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Flatten each cookie slightly with the back of a spoon or your fingers.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
