Ingredients:
For the crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup vegan butter, cold and cubed
- Pinch of salt
For the lemon filling:
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon baking powder
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 cup non-dairy milk (such as almond or soy milk)
For garnish:
- Powdered sugar, for dusting

Preparation Steps:
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a food processor or using a pastry cutter, combine the flour, powdered sugar, vegan butter, and salt until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking pan in an even layer.
- Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden brown.
- While the crust is baking, prepare the lemon filling. In a mixing bowl, whisk together the granulated sugar, cornstarch, and baking powder.
- Add the lemon juice, lemon zest, and non-dairy milk to the bowl and whisk until smooth and well combined.
- Pour the lemon filling over the baked crust and return the pan to the oven.
- Bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden brown.
- Remove the pan from the oven and let the bars cool completely in the pan.
- Once cooled, dust the top of the bars with powdered sugar.
- Cut into squares and serve.
