Ingredients:

  • 2 large cucumbers, washed and sliced into rounds
  • 1 cup raw cashews, soaked in water for 2-4 hours or overnight
  • 1 clove garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste

  • Mixing bowl
  • Spoon or piping bag

Preparation Steps:

  1. In a food processor or blender, combine the soaked cashews, minced garlic, lemon juice, chives, parsley, salt, and pepper. Blend until smooth and creamy, adding water as needed to reach your desired consistency.
  2. Transfer the cashew cream to a mixing bowl and season with additional salt and pepper if needed.
  3. Arrange the cucumber slices on a serving platter.
