Vegan Coconut Matcha Energy Balls

I love to enjoy these energy balls as a mid-morning or afternoon snack when I need a boost of energy. They’re also great to take with you on the go, whether you’re heading to work, running errands, or hitting the gym. Plus, they’re kid-friendly, so they make a perfect addition to school lunchboxes or as an after-school treat.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 tablespoon matcha powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut for coating (optional)

  • Baking sheet or plate

Preparation Steps:

  1. Prepare the Ingredients:
    • In a food processor or high-speed blender, combine the rolled oats, shredded coconut, almond butter, maple syrup, matcha powder, vanilla extract, and a pinch of salt.
  2. Blend the Mixture:
    • Process the mixture until it comes together and forms a sticky dough.
  3. Form the Energy Balls:
    • Scoop out tablespoon-sized portions of the dough and roll them into balls using your hands.
    • If desired, roll the balls in extra shredded coconut to coat.
  4. Chill and Serve:
    • Place the energy balls on a baking sheet or plate and chill them in the refrigerator for at least 30 minutes to firm up.
    • Once chilled, the energy balls are ready to enjoy!
