Ingredients:

  • 1 cup rolled oats
  • 1/2 cup shredded coconut, plus extra for rolling
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • Zest and juice of 1 lime
  • 1 teaspoon vanilla extract
  • Pinch of salt

  • Mixing bowl
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. In a food processor, combine the rolled oats, shredded coconut, almond butter, maple syrup, lime zest and juice, vanilla extract, and a pinch of salt.
  2. Process the mixture until it comes together and forms a sticky dough.
  3. Scoop out tablespoon-sized portions of the dough and roll them into balls.
  4. Roll each ball in shredded coconut to coat.
  5. Place the energy balls on a baking sheet lined with parchment paper.
