Vegan Coconut Date Rolls

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup unsweetened shredded coconut, plus extra for coating
  • 1/4 cup raw almonds
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt

Equipment/Utensils:

  • Food processor
  • Parchment paper
  • Plate

Preparation Steps:

  1. Place the pitted dates, shredded coconut, raw almonds, vanilla extract, and a pinch of sea salt into a food processor.
  2. Process the ingredients until a sticky dough forms and all the ingredients are well combined.
  3. Take about a tablespoon of the dough and roll it between your palms to form a small ball.
  4. Roll the ball in shredded coconut until evenly coated.
  5. Place the coconut-coated date ball on a plate lined with parchment paper.
  6. Repeat the process with the remaining dough.
  7. Once all the date rolls are formed, place them in the refrigerator for at least 30 minutes to firm up.
  8. Serve and enjoy!
