Ingredients

  • 1 pre-made pizza crust (vegan)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 1 block (14 oz) firm tofu, drained and crumbled
  • 1 tbsp nutritional yeast
  • 1 tsp turmeric
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup vegan cheese shreds
  • 1/4 cup chopped fresh basil (optional)

Preparation Steps

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Sauté Vegetables: Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced onion and cook for about 5 minutes until soft. Stir in the bell pepper and mushrooms and cook for another 5 minutes until tender. Add spinach and cook until wilted.
  3. Prepare Tofu Scramble: In a mixing bowl, combine crumbled tofu, 1 tbsp nutritional yeast, turmeric, smoked paprika, garlic powder, black pepper, and salt. Mix well.
  4. Assemble Casserole: Spread the pizza crust evenly in the bottom of a greased baking dish. Top with the sautéed vegetables and tofu scramble. Sprinkle vegan cheese shreds evenly over the top.
  5. Bake: Bake in the preheated oven for 35-40 minutes, or until the crust is crispy and the cheese is melted and bubbly.
  6. Garnish and Serve: If desired, sprinkle with fresh basil before serving. Let the casserole cool slightly before cutting into squares.
