Vegan Baked Veggie Fritters

Ingredients:

  • 1 medium zucchini, grated
  • 1 medium carrot, grated
  • 1/2 red bell pepper, finely diced
  • 1/2 yellow bell pepper, finely diced
  • 2 green onions, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup chickpea flour
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray

Equipment/Utensils Required:

  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini, grated carrot, diced bell peppers, chopped green onions, and chopped parsley.
  3. In a small bowl, whisk together the chickpea flour, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Add the dry ingredients to the bowl of vegetables and mix until well combined. The mixture should be thick and sticky.
  5. Using your hands, form the mixture into small patties and place them on the prepared baking sheet.
  6. Lightly spray the tops of the fritters with olive oil spray.
  7. Bake in the preheated oven for 20-25 minutes, or until the fritters are golden brown and crispy on the outside.
  8. Remove from the oven and allow to cool slightly before serving.
  9. Serve the Vegan Baked Veggie Fritters with your favorite dipping sauce and enjoy!
