Vegan and Gluten-Free Sugar Cookies (Clean Eating Kitchen)

These Vegan and Gluten-Free Sugar Cookies are a favorite in our household. They’re so easy to make and perfect for any occasion. Whether it’s a holiday celebration or a simple weekend baking session with the kids, these cookies are always a hit. I love that they’re made with wholesome ingredients and are free from any refined sugars. Plus, they taste absolutely delicious!

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • Vegan sprinkles (optional)

  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, melted coconut oil, maple syrup, vanilla extract, baking soda, and salt until well combined.
  3. Use a cookie scoop or your hands to form the dough into 12 equal-sized balls and place them on the prepared baking sheet.
  4. Flatten each ball of dough with the palm of your hand to create a cookie shape.
  5. If desired, top each cookie with vegan sprinkles.
  6. Bake in the preheated oven for 10 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
