Vegan and Gluten-Free Chocolate Chip Cookies (Clean Eating Kitchen)

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  3. Add the melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Fold in the vegan chocolate chips until evenly distributed throughout the dough.
  5. Use a cookie scoop or your hands to form the dough into 12 equal-sized balls. Place them on the prepared baking sheet.
  6. Flatten each ball slightly with the palm of your hand.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
