Ingredients
  

  • 1 large cauliflower head chopped
  • 2 tablespoons olive oil
  • 1 bulb garlic top trimmed off
  • 1 onion diced
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese grated
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh chives for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Drizzle the cauliflower florets and garlic bulb with olive oil. Wrap the garlic in foil and place both on a baking sheet.
  • Roast for 30 minutes, until cauliflower is golden and tender.
  • In a large pot, sauté the onion in olive oil over medium heat until translucent, about 5 minutes.
  • Squeeze the roasted garlic cloves out of their skins and add them to the pot along with the roasted cauliflower.
  • Pour in the vegetable broth and bring to a simmer.
  • Blend the soup until smooth using a blender or immersion blender.
  • Stir in the cheddar cheese and heavy cream. Season with salt and pepper.
  • Garnish with fresh chives and serve hot.
