Raw Vegan Key Lime Pie Bites

I love making these Key Lime Pie Bites for summer gatherings, picnics, or simply as a refreshing treat on a hot day. They’re also a hit with my kids, who love their zesty flavor and creamy texture. Whether you’re hosting a party or just craving something sweet, these bite-sized delights are sure to please!

Ingredients:

  • 1 cup raw cashews, soaked in water for at least 2 hours
  • 1/2 cup shredded coconut
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Equipment/Utensils:

  • Food processor or high-speed blender
  • Muffin tin or silicone mold

Preparation Steps:

  1. Prepare the Crust:
    • In a food processor, combine the shredded coconut and a pinch of salt. Process until the coconut is finely ground.
    • Add the soaked cashews, lime zest, melted coconut oil, and vanilla extract to the food processor. Process until the mixture is well combined and sticks together when pressed between your fingers.
  2. Form the Pie Bites:
    • Line a muffin tin or silicone mold with parchment paper or liners.
    • Press the crust mixture into the bottom of each cavity, forming an even layer.
  3. Make the Filling:
    • Rinse out the food processor.
    • Add the soaked cashews, fresh lime juice, maple syrup, and a pinch of salt to the food processor. Blend until smooth and creamy, scraping down the sides as needed.
  4. Assemble the Bites:
    • Pour the lime filling over the crust in each cavity, filling almost to the top.
    • Smooth the tops with a spatula or back of a spoon.
  5. Chill and Serve:
    • Place the muffin tin or silicone mold in the freezer for at least 2 hours to set.
    • Once set, remove the Key Lime Pie Bites from the mold and let them thaw for a few minutes before serving.
