  • 4 cups mixed chicories (such as radicchio, endive, and escarole), torn into bite-sized pieces
  • 1/2 cup raw walnuts, roughly chopped
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup nutritional yeast
  • 2 tablespoons raw cashews
  • 2 tablespoons lemon juice
  • 1 tablespoon capers
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water
  • 1/4 cup extra-virgin olive oil

Instructions:

  1. In a large mixing bowl, combine the mixed chicories, chopped walnuts, and pumpkin seeds. Toss gently to combine.
  2. In a blender or food processor, combine the nutritional yeast, raw cashews, lemon juice, capers, minced garlic, Dijon mustard, sea salt, black pepper, and water. Blend until smooth and creamy.
  3. While the blender is running, slowly drizzle in the extra-virgin olive oil until emulsified and creamy.
  4. Pour the Caesar dressing over the chicory mixture and toss until evenly coated.
