Raw Vegan Brownies

These brownies are made with simple and natural ingredients like nuts, dates, and cocoa powder, making them rich in fiber, healthy fats, and antioxidants. Plus, they’re entirely raw, meaning you get all the nutritional benefits without any added sugars or processed ingredients.

Ingredients:

  • 1 cup walnuts
  • 1 cup almonds
  • 2 cups Medjool dates, pitted
  • 3/4 cup cocoa powder
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water (if needed)

Equipment/Utensils Required:

  • Food processor
  • 8×8 inch baking dish
  • Parchment paper

Preparation Steps:

  1. Prepare the Baking Dish:
    • Line an 8×8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal of the brownies.
  2. Process the Nuts:
    • In a food processor, blend the walnuts and almonds until finely ground.
  3. Add the Remaining Ingredients:
    • Add the pitted dates, cocoa powder, sea salt, and vanilla extract to the food processor with the ground nuts.
  4. Process Until Combined:
    • Process the mixture until it forms a sticky dough. If the mixture is too dry, add 1-2 tablespoons of water and process again until it reaches the desired consistency.
  5. Press Into the Baking Dish:
    • Transfer the brownie mixture to the prepared baking dish. Use your hands or a spatula to press the mixture evenly into the dish.
  6. Chill and Serve:
    • Place the baking dish in the refrigerator for at least 1 hour to set. Once set, remove the brownies from the dish using the parchment paper overhang. Cut into squares and serve.
