Raw Vegan Brownies

Ingredients:

  • 1 cup Medjool dates, pitted (about 10-12 dates)
  • 1 cup raw walnuts
  • 1/2 cup raw almonds
  • 1/4 cup raw cacao powder
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract

Equipment/Utensils Required:

  • Food processor
  • 8×8 inch square baking dish
  • Parchment paper

Instructions:

  1. Line an 8×8 inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a food processor, combine the pitted dates, raw walnuts, raw almonds, raw cacao powder, sea salt, and vanilla extract.
  3. Pulse the ingredients together until they are well combined and form a sticky dough-like consistency.
  4. Transfer the mixture to the prepared baking dish and press it down firmly and evenly using your hands or the back of a spoon.
  5. Place the baking dish in the refrigerator and chill the brownies for at least 1 hour to firm up.
  6. Once firm, remove the brownies from the refrigerator and use the parchment paper overhang to lift them out of the baking dish.
  7. Cut the brownies into squares and serve.
  8. Store any leftover brownies in an airtight container in the refrigerator for up to one week.
