Ingredients:

  • 12 oz (340g) pasta of your choice
  • 4 cups vegetable broth
  • 1 cup canned coconut milk
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Equipment/Utensils Required:

  • Large pot with lid
  • Wooden spoon

Instructions:

  1. Combine Ingredients: In a large pot, combine the pasta, vegetable broth, canned coconut milk, minced garlic, olive oil, dried thyme, salt, and black pepper.
  2. Bring to Boil: Place the pot over medium-high heat and bring the mixture to a boil.
  3. Reduce Heat: Once boiling, reduce the heat to medium-low and let the pasta simmer, stirring occasionally, for about 10-12 minutes, or until the pasta is cooked and the sauce has thickened.
  4. Adjust Seasoning: Taste and adjust the seasoning if needed.
