Indian Aloo Gobi (Potato and Cauliflower Curry)

Ingredients:

  • 1 large cauliflower, cut into florets
  • 3 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp turmeric powder
  • 1 cup tomato puree
  • Salt to taste
  • 2 tbsp vegan butter or oil
  • Fresh cilantro for garnish

Instructions:

  1. Heat the vegan butter or oil in a large pot or kadhai over medium heat. Add the cumin seeds and let them sizzle.
  2. Add the chopped onions and sauté for 2-3 minutes until translucent. Add the ginger and garlic and cook for 1 minute.
  3. Add the spices – coriander powder, garam masala, red chili powder, and turmeric. Cook for 30 seconds, stirring continuously to prevent burning.
  4. Pour in the tomato puree and mix well. Let it simmer for 2-3 minutes.
  5. Add the cauliflower florets and potato cubes. Season with salt to taste. Add 1/2 cup water and mix gently to coat the vegetables with the spices.
  6. Cover and cook for 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are fork-tender.
  7. Garnish with fresh cilantro and serve hot with naan, roti, or basmati rice.
