  • 1 packet (2 1/4 teaspoons) active dry yeast

  • 1 cup warm unsweetened almond milk (or any other plant-based milk)
  • 1/4 cup vegan butter, melted (plus more for brushing)
  • 1/4 cup warm water
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Preparation Steps

  4. Add Garlic and Herbs: Stir in the minced garlic, chopped rosemary, and thyme. The dough will start to take on a wonderful aroma at this stage.
  5. Knead the Dough: Gradually add the remaining flour, about 1/2 cup at a time, until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a floured surface and knead for 5-7 minutes, until it is smooth and elastic.
  6. First Rise: Lightly grease a clean bowl with olive oil and place the dough in it, turning once to coat. Cover with a kitchen towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  7. Shape the Rolls: Punch down the dough to release any air bubbles. Divide the dough into 12 equal pieces and shape each piece into a ball. Arrange the rolls on a parchment-lined baking sheet, spacing them evenly.
  8. Second Rise: Cover the rolls with a kitchen towel and let them rise again for about 20-30 minutes, until they are puffy.
  9. Bake the Rolls: Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes, or until they are golden brown on top.
  10. Brush with Vegan Butter: As soon as the rolls come out of the oven, brush them with melted vegan butter for an extra layer of flavor and softness. Let them cool slightly before serving.
