Funfetti Cookies (Eat With Clarity)

My kids absolutely love them, and I love that they’re vegan, so I can feel good about serving them to my family. Plus, they’re so easy to make—just mix up the dough, fold in the sprinkles, and bake. In no time, you’ll have a batch of delicious, colorful cookies that are perfect for snacking, dessert, or any time you need a little pick-me-up. Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegan butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons non-dairy milk
  • 1/4 cup rainbow sprinkles

  • Whisk
  • Hand or stand mixer

  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the vanilla extract and non-dairy milk to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. Gently fold in the rainbow sprinkles.
  7. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Flatten the dough slightly with your fingers.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
