  • 1/2 red onion thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or agave syrup

  • 1/2 teaspoon dried dill or fresh if available
  • Salt and pepper to taste

Instructions
 

  • Peel and slice the cucumbers, then place them in a large mixing bowl.
  • Thinly slice the red onion and add it to the bowl with cucumbers.
  • In a separate bowl, whisk together apple cider vinegar, olive oil, honey or agave syrup, Dijon mustard, dried dill, salt, and pepper.
  • Pour the dressing over the cucumbers and onions, tossing to coat evenly.
  • Chill the salad for at least 10 minutes before serving to let the flavors meld.
