Crockpot Mashed Cauliflower

Ingredients:

  • 1 head cauliflower, cut into florets
  • 3 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 2 tablespoons vegan butter
  • 2 tablespoons nutritional yeast
  • Salt and pepper, to taste
  • Chopped chives, for garnish

Equipment/Utensils Required:

  • Crockpot or slow cooker
  • Steamer basket or microwave-safe bowl
  • Potato masher or immersion blender
  • Mixing spoon
  • Serving bowl

Preparation Steps:

  1. Place the cauliflower florets and minced garlic in a steamer basket or microwave-safe bowl. Steam the cauliflower until tender, about 8-10 minutes.
  2. Transfer the steamed cauliflower and garlic to the crockpot. Add the vegetable broth, vegan butter, and nutritional yeast. Season with salt and pepper.
  3. Cover and cook on high for 2 hours, or until the cauliflower is very tender.
  4. Use a potato masher or immersion blender to mash the cauliflower until smooth and creamy.
  5. Taste and adjust the seasoning if necessary. Serve hot, garnished with chopped chives.
