Vegan Chocolate Coconut Haystacks

I love making these Chocolate Coconut Haystacks for family movie nights or as a special treat for my kids’ lunchboxes. They’re so easy to make that I often whip up a batch whenever we’re craving something sweet. I also love that they’re a healthier alternative to store-bought desserts, as they’re made with natural ingredients and no added preservatives. Plus, they’re so delicious that my kids don’t even realize they’re eating something healthy!

Ingredients:

  • 2 cups shredded coconut (unsweetened)
  • 1 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

  • Baking sheet lined with parchment paper
  • Mixing bowl
  • Saucepan
  • Spoon or cookie scoop

Preparation Steps:

  1. Prepare the Chocolate Mixture:
    • In a saucepan, melt the dairy-free chocolate chips and coconut oil over low heat, stirring until smooth. Remove from heat and stir in the vanilla extract and a pinch of sea salt.
  2. Combine with Coconut:
    • In a mixing bowl, combine the shredded coconut with the melted chocolate mixture. Stir until well coated.
  3. Form Haystacks:
    • Using a spoon or cookie scoop, drop small mounds of the chocolate-coconut mixture onto a baking sheet lined with parchment paper.
  4. Chill and Serve:
    • Place the baking sheet in the refrigerator for about 10 minutes, or until the haystacks are set. Once set, remove from the refrigerator and enjoy!
