  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup grated carrots about 2 medium carrots
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup raisins or currants optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg until well combined.
  • In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually mix the dry ingredients into the butter mixture.
  • Stir in grated carrots, nuts, and raisins if using.
  • Drop spoonfuls of dough onto the prepared baking sheet.
  • Bake for 10-12 minutes or until edges are golden.
  • Cool on a wire rack.
