- 1 tablespoon olive oil
- 1 small onion, diced (about 1/2 cup)
- 1 bell pepper, diced (about 1 cup)

- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole-wheat tortillas (8-inch)
- 1 cup salsa
- 1/2 cup black beans, drained and rinsed
- 1/2 cup shredded vegan cheese (optional)
- 1/4 cup chopped cilantro (optional)

Instructions:
