  • 2 large cucumbers thinly sliced
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar

Instructions

  • Add the chopped peanuts, cilantro, mint, red onion, and red chili (if using) to the bowl and mix well.
  • Let the salad sit for 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
