  • 2 large cucumbers thinly sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup rice vinegar

  • 1 tablespoon honey or maple syrup
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic minced
