Ingredients
  

  • 2 cups cucumbers diced (about 2 medium cucumbers)
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño pepper seeded and minced (optional, for extra heat)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Dice the cucumbers and halve the cherry tomatoes. Place them in a mixing bowl.
  • Finely chop the red onion and cilantro, and add them to the bowl with the cucumbers and tomatoes.
  • If using, seed and mince the jalapeño pepper. Add it to the bowl.
  • Drizzle the lime juice and olive oil over the mixture.
  • Season with salt and pepper to taste.
  • Gently toss all the ingredients together until well combined.
  • Chill in the refrigerator for about 30 minutes to allow flavors to meld before serving.
