  • In a medium bowl, mix 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  • In a large bowl, whisk together 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 cup vegetable oil, 2 large eggs, and 1 teaspoon vanilla extract until well combined.
  • Add the dry ingredients to the wet mixture and stir until just combined.
  • Fold in the grated zucchini and, if desired, 1/2 cup chopped walnuts.
