Vegan Chocolate Avocado Truffles

Ingredients:

  • 1 ripe avocado
  • 1/4 cup cocoa powder, plus extra for coating
  • 3 tablespoons maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Shredded coconut, chopped nuts, or cocoa powder for coating (optional)

  • Fork or potato masher

  • Baking sheet lined with parchment paper

Preparation Steps:

  1. Prepare the Truffle Mixture:
    • Cut the avocado in half and remove the pit. Scoop the avocado flesh into a mixing bowl and mash it with a fork until smooth.
    • Add the cocoa powder, maple syrup or agave nectar, vanilla extract, and a pinch of salt to the mashed avocado. Mix until well combined and smooth.
  2. Shape the Truffles:
    • Using your hands, roll the chocolate avocado mixture into small balls, about 1 inch in diameter.
    • If desired, roll the truffles in shredded coconut, chopped nuts, or cocoa powder to coat.
  3. Chill and Serve:
    • Place the truffles on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
    • Once chilled, serve and enjoy!
