Vegan Coconut Chia Pudding Parfaits

I love enjoying these coconut chia pudding parfaits as a refreshing dessert on a warm summer evening. They’re also great for breakfast or as a midday snack. I often make them ahead of time and store them in the fridge, so they’re ready to go whenever I need a quick and healthy treat. My family loves them too! They’re always a hit, and my kids don’t even realize they’re eating something healthy.

Ingredients:

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or agave syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup shredded coconut, toasted

Equipment/Utensils:

  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Four serving glasses or jars

Preparation Steps:

  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup or agave syrup, and vanilla extract until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken.
  3. After the chia pudding has set, give it a good stir to make sure there are no clumps.
  4. To assemble the parfaits, layer the chia pudding with fresh berries in serving glasses or jars.
  5. Top each parfait with a sprinkle of toasted shredded coconut.
  6. Serve immediately and enjoy!
