Raw Vegan Brownies

I love making these raw vegan brownies for special occasions, potlucks, or just as a treat for my family. They’re so easy to whip up, and you can make a big batch and store them in the fridge for a quick snack whenever you need a little pick-me-up. I also love bringing them to parties because they’re always a hit, and nobody can believe they’re vegan! Plus, they’re great for satisfying those chocolate cravings without the guilt.

Ingredients:

  • 1 cup Medjool dates, pitted (about 10-12 dates)
  • 1 cup raw walnuts
  • 1/2 cup raw almonds
  • 1/4 cup raw cacao powder
  • Pinch of sea salt

Equipment/Utensils:

  • Food processor
  • 8×8 inch baking dish
  • Parchment paper

Preparation Steps:

  1. Line an 8×8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. Place the pitted Medjool dates, raw walnuts, raw almonds, raw cacao powder, and a pinch of sea salt in a food processor.
  3. Process the mixture until it comes together into a sticky dough-like consistency.
  4. Transfer the mixture to the prepared baking dish and press it down evenly with your hands or a spatula.
  5. Place the brownies in the refrigerator for at least 1 hour to set.
  6. Once set, remove the brownies from the baking dish using the parchment paper overhang and cut them into squares.
  7. Serve and enjoy!
