Vegan Avocado Chocolate Truffles

Ingredients:

  • 1 ripe avocado, mashed
  • 200g dark chocolate, chopped
  • 2 tablespoons cocoa powder, plus extra for coating
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

  • Microwave-safe bowl

Preparation Steps:

  1. Melt the Chocolate:
    • Place the chopped dark chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring in between, until melted and smooth. Alternatively, you can melt the chocolate using a double boiler.
  2. Prepare the Avocado Mixture:
    • In a medium mixing bowl, combine the mashed avocado, melted chocolate, cocoa powder, maple syrup (if using), vanilla extract, and a pinch of salt. Mix until well combined and smooth.
  3. Chill the Mixture:
    • Place the mixture in the refrigerator for about 30 minutes to firm up.
  4. Form the Truffles:
    • Once the mixture is firm, use a spoon to scoop out small portions and roll them into balls using your hands.
  5. Coat the Truffles:
    • Roll the truffles in cocoa powder until evenly coated.
  6. Chill and Serve:
    • Place the truffles on a baking sheet lined with parchment paper and chill them in the refrigerator for at least 1 hour before serving. Enjoy!
