Vegan Chocolate Almond Butter Cups

Made with just a few simple ingredients, these chocolate almond butter cups are vegan, gluten-free, and refined sugar-free. The combination of rich dark chocolate and creamy almond butter is simply irresistible. Plus, they are customizable, so you can add your favorite toppings for an extra special touch.

Ingredients:

  • 1 cup dairy-free dark chocolate chips
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1/4 teaspoon sea salt
  • Optional toppings: chopped almonds, shredded coconut, flaky sea salt

Equipment/Utensils Required:

  • 12-cup mini muffin tin
  • Paper mini muffin liners

Preparation Steps:

  1. Melt the Chocolate:
    • Place the dairy-free dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  2. Prepare the Almond Butter Filling:
    • In a separate bowl, mix together the almond butter, maple syrup, and sea salt until well combined.
  3. Assemble the Chocolate Almond Butter Cups:
    • Line a 12-cup mini muffin tin with paper liners.
    • Spoon a small amount of melted chocolate into the bottom of each muffin liner, just enough to cover the bottom.
    • Place the muffin tin in the freezer for 5 minutes to allow the chocolate to set.
    • Once the chocolate has set, spoon a small amount of almond butter filling onto the center of each chocolate base.
    • Cover the almond butter filling with the remaining melted chocolate, ensuring it completely covers the almond butter.
    • If desired, sprinkle chopped almonds, shredded coconut, or flaky sea salt on top of each chocolate cup.
    • Return the muffin tin to the freezer for another 10 minutes to allow the chocolate almond butter cups to set completely.
  4. Serve and Enjoy:
    • Once set, remove the chocolate almond butter cups from the muffin tin and peel off the paper liners.
    • Serve chilled and enjoy!
