Vegan Lemon Bars

Vegan Lemon Bars are perfect for any occasion. Whether you’re hosting a party, enjoying a family dinner, or simply treating yourself to a delicious dessert, these bars are sure to impress.

I love serving them at gatherings because they’re always a hit with both vegans and non-vegans alike. Plus, they’re so easy to make, you can whip up a batch whenever the craving strikes!

Ingredients:

For the crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup vegan butter, cold and cubed
  • Pinch of salt

For the lemon filling:

  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup non-dairy milk (such as almond or soy milk)

For garnish:

  • Powdered sugar, for dusting

Equipment/Utensils Required:

  • 8×8 inch baking pan
  • Mixing bowl
  • Whisk
  • Food processor or pastry cutter
  • Zester
  • Juicer

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a food processor or using a pastry cutter, combine the flour, powdered sugar, vegan butter, and salt until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking pan in an even layer.
  4. Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden brown.
  5. While the crust is baking, prepare the lemon filling. In a mixing bowl, whisk together the granulated sugar, cornstarch, and baking powder.
  6. Add the lemon juice, lemon zest, and non-dairy milk to the bowl and whisk until smooth and well combined.
  7. Pour the lemon filling over the baked crust and return the pan to the oven.
  8. Bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden brown.
  9. Remove the pan from the oven and let the bars cool completely in the pan.
  10. Once cooled, dust the top of the bars with powdered sugar.
  11. Cut into squares and serve.
