Vegan Nacho Bites

These Vegan Nacho Bites are the perfect appetizer for any occasion. Whether you’re hosting a party, watching the big game, or just craving a tasty snack, these little bites are sure to satisfy. They’re made with wholesome ingredients and loaded with flavor, making them a healthier alternative to traditional nachos. Ingredients:

  • 1 bag tortilla chips
  • 1 cup vegan cheese, shredded
  • 1 cup black beans, cooked
  • 1/2 cup corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup pickled jalapeños (optional)
  • Lime wedges, for serving
  • Salsa, for serving
  • Vegan sour cream, for serving

Equipment/Utensils Required:

  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Serving platter

Preparation Steps:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Arrange the tortilla chips in a single layer on the prepared baking sheet.
  3. Sprinkle the shredded vegan cheese evenly over the tortilla chips.
  4. Top the chips with black beans, corn, diced red onion, cherry tomatoes, and black olives.
  5. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and sprinkle with chopped cilantro and diced avocado.
  7. If desired, top with pickled jalapeños for an extra kick.
  8. Serve immediately with lime wedges, salsa, and vegan sour cream on the side.
