Vegan Roasted Beet Hummus

Ingredients:

  • 2 medium beets, peeled and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • Water, as needed

Equipment/Utensils Required:

  • Baking sheet
  • Blender or food processor

Preparation Steps:

  1. Preheat the oven to 400°F (200°C).
  2. Place the diced beets on a baking sheet and drizzle with olive oil. Toss to coat.
  3. Roast the beets in the preheated oven for 30-35 minutes, or until tender.
  4. In a blender or food processor, combine the roasted beets, chickpeas, tahini, minced garlic, lemon juice, ground cumin, salt, and pepper.
  5. Blend until smooth, adding water as needed to reach your desired consistency.
  6. Taste and adjust the seasoning, adding more salt, pepper, or lemon juice if needed.
  7. Transfer the hummus to a serving bowl and drizzle with a little extra olive oil, if desired.
