Vegan Mashed Avocado Finger Sandwiches

Ingredients:

  • 1 ripe avocado, mashed
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 slices of whole grain bread
  • Optional: sliced cucumber, tomato, lettuce, or sprouts

  • Fork
  • Bread knife

Preparation Steps:

  1. In a mixing bowl, combine the mashed avocado, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Lay out the slices of bread on a clean surface.
  3. Spread the avocado mixture evenly onto 4 slices of bread.
  4. Top each avocado-covered slice with your choice of sliced cucumber, tomato, lettuce, or sprouts.
  5. Place the remaining 4 slices of bread on top to form sandwiches.
  6. Using a bread knife, carefully cut each sandwich into 4 smaller finger sandwiches.
