Vegan and Gluten-Free Apple Cinnamon Cookies (Clean Eating Kitchen)

Gluten-Free Apple Cinnamon Cookies are a definite favorite in our house! Whether it’s for a mid-morning snack, an afternoon pick-me-up, or a sweet treat after dinner, these cookies are perfect for any occasion. Plus, they’re so easy to make and are a great way to sneak some extra fruit into your diet!

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup grated apple (about 1 small apple)
  • 1/4 cup chopped walnuts (optional)

Equipment/Utensils Required:

  • Mixing bowl
  • Spoon or spatula
  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, almond flour, cinnamon, baking powder, and salt.
  3. In a separate bowl, whisk together the applesauce, maple syrup, almond butter, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in the grated apple and chopped walnuts, if using.
  6. Use a spoon or cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
