Vegan and Gluten-Free Carrot Cake Cookies (Clean Eating Kitchen)

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup grated carrots
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts (optional)

Equipment/Utensils Required:

  • Mixing bowl
  • Grater
  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Add the maple syrup, unsweetened applesauce, grated carrots, raisins, and chopped walnuts (if using) to the dry ingredients and mix until well combined.
  4. Use a spoon or cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  5. Flatten each cookie slightly with the back of a spoon.
  6. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
