Vegan Ginger Molasses Cookies (Eat With Clarity)

As a mom, one of my favorite things to do during the holiday season is to bake with my family, and these Vegan Ginger Molasses Cookies are always a hit! The aroma of ginger, cinnamon, and cloves filling the house while these cookies bake is simply irresistible. Plus, there’s something so comforting about enjoying a warm, freshly baked cookie with a cup of tea on a cold winter day.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup vegan butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup molasses
  • 1 tablespoon almond milk
  • 1 teaspoon vanilla extract

For rolling:

  • 1/4 cup granulated sugar

Equipment/Utensils Required:

  • Mixing bowls
  • Measuring cups and spoons
  • Whisk
  • Baking sheet
  • Parchment paper

Preparation Steps:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a separate large bowl, beat together the softened vegan butter and granulated sugar until creamy.
  4. Add the molasses, almond milk, and vanilla extract to the butter and sugar mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll the dough into tablespoon-sized balls, then roll each ball in granulated sugar until coated.
  7. Place the cookie dough balls onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10 minutes, or until the cookies are set but still soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
