Crockpot Sweet Potatoes

As a busy mom, I’m always looking for ways to make mealtime easier without sacrificing taste or nutrition. That’s why I love making Crockpot Sweet Potatoes. I can toss them in the slow cooker in the morning, and by dinnertime, they’re perfectly cooked and ready to serve. Plus, my kids absolutely love them! Whether I’m serving them alongside roasted veggies or turning them into a hearty sweet potato mash, they’re always a hit at the dinner table.

Ingredients:

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: vegan butter, cinnamon, maple syrup

Equipment/Utensils Required:

  • Crockpot or slow cooker
  • Fork

Preparation Steps:

  1. Wash the sweet potatoes thoroughly under running water and pat them dry with a paper towel.
  2. Pierce each sweet potato several times with a fork to allow steam to escape while cooking.
  3. Rub the sweet potatoes with olive oil, salt, and black pepper, ensuring they are evenly coated.
  4. Place the sweet potatoes in the crockpot and cook on high for 4 hours or low for 6-8 hours, or until they are tender and easily pierced with a fork.
  5. Once cooked, remove the sweet potatoes from the crockpot and allow them to cool for a few minutes before serving.
  6. Serve the sweet potatoes hot with your favorite toppings, such as vegan butter, cinnamon, or maple syrup.
