Ingredients:

  • 4 slices whole grain bread
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons vegan protein powder
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon maple syrup
  • Cooking spray or vegan butter, for cooking
  • Fresh berries, for serving
  • Maple syrup, for serving

Equipment/Utensils Required:

  • Whisk

Instructions:

  1. Prepare Batter: In a mixing bowl, whisk together the almond milk, vegan protein powder, ground flaxseed, vanilla extract, cinnamon, nutmeg, and maple syrup until well combined.
  2. Dip Bread Slices: Dip each slice of bread into the batter, ensuring it’s fully coated on both sides.
  3. Cook French Toast: Heat a skillet or griddle over medium heat and lightly grease with cooking spray or vegan butter. Place the coated bread slices onto the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  4. Serve: Serve the French toast hot with fresh berries and a drizzle of maple syrup.
