Strawberry Coconut Overnight Oats

When it comes to breakfast, Strawberry Coconut Overnight Oats are my absolute favorite! I love preparing them the night before and waking up to a ready-made, nutritious meal.

Whether I’m rushing out the door in the morning or enjoying a leisurely breakfast on the weekend, these overnight oats are always a satisfying choice.

I especially enjoyed them during my beach vacation last summer; they were the perfect way to start each day with a taste of paradise.

Ingredients:

  • 1 cup rolled oats
  • 1 cup coconut milk
  • 1/2 cup chopped fresh strawberries
  • 2 tablespoons shredded coconut
  • 1 tablespoon maple syrup or agave nectar (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract

Equipment/Utensils Required:

  • Mixing bowl
  • Spoon
  • Mason jars or airtight containers for storing

Instructions:

  1. Mix Ingredients: In a mixing bowl, combine the rolled oats, coconut milk, chopped strawberries, shredded coconut, maple syrup or agave nectar (if using), and vanilla extract. Stir well to combine.
  2. Divide into Jars: Transfer the mixture into two mason jars or airtight containers, making sure to leave some space at the top for expansion.
  3. Refrigerate Overnight: Cover the jars with lids and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and the flavors to meld.
  4. Serve: The next morning, give the oats a good stir and add more coconut milk if desired. Top with additional sliced strawberries and shredded coconut, if desired, and enjoy your delicious and nutritious Strawberry Coconut Overnight Oats!
